Easy Chuck Roast and Potatoes

This is a recipe from my Mother-In-Law. It is a great way to make an inexpensive cut of meat into a very flavorful meal. It is also super easy because your potatoes cook with the meat, so you just need to throw together a salad or some veggies for a complete meal.

Easy Chuck Roast and Potatoes
  • 2 - 3 lb chuck roast (bone-in or boneless)
  • 1 packet Lipton dry onion soup mix (or homemade equivalent)
  • 3 small potatoes, peeled and cut into chunks
  1. In a shallow dish, lay down aluminum foil
  2. Place roast in center of foil
  3. Top roast with the soup mix
  4. Arrange potatoes around sides of roast, put some on top if you need the space:
  5. Wrap foil around roast and fold ends together to form a packet:
  6. Cook in oven at 325 for approximately 1 hour 20 minutes. Time will vary based on the size of you roast, whether it has a bone or not, and how well done you like your meat. Use a meat thermometer for best results!
And yes, I forgot to take a picture of the finished roast. It was yummy though :)
