Crockpot Enchiladas

  • 1 lb ground beef
  • 1 package taco seasoning (plus water as specified on package)
  • 1/4 cup diced onion
  • 2 cups enchilada sauce
  • 6 corn tortillas
  • 2 cups grated pepper jack cheese
  • sour cream, sliced green onions (optional)
  1. Prepare ground beef according to instructions on taco seasoning
  2. Layer tortillas, enchilada sauce, meat, and onion in crockpot
  3. Cook on low for 8-10 hours
  4. Approximately one hour before serving, top with cheese
  5. Garnish with green onions and sour cream if desired
