Crockpot Cornbread Taco Casserole
- 1 lb ground beef
- 1 package taco seasoning
- 3/4 cups water (or how ever much is called for by the taco seasoning)
- 2 cups diced tomato (or 1 can diced tomato)
- 1 green bell pepper, diced
- 1 package cornbread mix (enough for 6 muffins)
- milk, eggs, margarine, and/or whatever the cornbread mix requires
- 1/2 cup cheddar cheese
- Prepare ground beef according to instructions on taco seasoning
- Grease sides of crockpot (I used a 5 quart)
- Place taco meat, tomatoes, and bell pepper in crockpot, mix well
- Prepare cornbread mix according to package, spoon over top of meat mixture in the crockpot
- Cook on low for approximately 6 hours
- Top with cheese and serve
